Vanilla Buttermilk Scones

all-purpose flour, plus more for work surface

granulated sugar
1 tbsp
baking powder

Finlandia Imported Unsalted Butter Bar, cold
¾ cup
buttermilk (or whole milk with 1 tbsp white vinegar added)

eggs
1 tsp
vanilla extract
¼ cup
Turbinado sugar
¼ cup
Optional add-ins: dried cherries, sweetened coconut flakes, unsalted pistachios

Instructions

  1. Preheat oven to 400°F.
  2. Grate the cold butter on a box grater, or cut into small cubes.
  3. In a large bowl, whisk together the flour, sugar, baking powder and salt.
  4. Work in the butter with a fork or clean hands, until it resembles coarse sand. Mix in your add-ins.
  5. In a small bowl, whisk together the milk, 1 egg, and vanilla.
  6. Pour the wet ingredients over the dry mixture. Gently stir until just combined. don’t overwork the dough.
  7. Place the dough onto a floured work surface. With hands, form into a rectangle. Fold dough in half, over itself several times to form layers.
  8. Pat out into 6″ circle.
  9. Cut into 8 wedges and place onto a parchment paper lined baking sheet. Chill, uncovered for 20 minutes.
  10. Whisk second egg, brush the tops and sides of the scones with egg. Sprinkle scones with turbinado sugar. Bake for about 20 minutes or until golden brown.
