Strawberry Vanilla Pie

For Crust:

7 tbsp

For Filling:

¾ cup
Heavy Cream
of a Vanilla Bean, split open and scrapped out
2 tbsp
Corn Starch
pkg. Vanilla Creamy Gourmet Cheese

For Topping:

9 Oz
1 tbsp
White Balsamic Vinegar
1 tbsp
3 tbsp
White Chocolate Chips (optional)


  1. Soften the butter, either by leaving out to room temperature, or quickly in the microwave. Whisk the softened butter together with the sugar till nice and creamy in appearance. Whisk in the egg.
  2. Add the flour and form into a soft smooth dough. Wrap the dough up in plastic wrap or foil and place in the fridge to chill for about 30 minutes Preheat oven to 400 degrees F
  3. Once chilled, roll out the dough and press down into a pie pan. Bake in the 400 degree oven on the middle shelf for 20 minutes
  4. In a sauce pan, heat the heavy cream with the vanilla bean, the sugar and the egg already having been beaten. In a small bowl stir together 2 Tbs. room temperature water with the Corn Starch to dissolve
  5. Add the Corn Starch to the cream mixture in the pan and cook until it begins to thicken. Keep on low heat until it starts to get a pudding like consistency, about 5 minutes.
  6. Take off of heat and allow to cool
  7. Add the Finlandia Vanilla Creamy Gourmet Cheese into the thickened cream. Mix until smooth. Add the filling into the cooled crust and smooth the top with a spatula
  8. Remove the greens and slice the strawberries. In a small bowl mix the cut strawberries with the white Balsamic and Sugar and mix well.
  9. Save for when serving.
  10. Cover and chill the pie in the refrigerator. When serving, scatter the marinated strawberries over the top of the pie.
  11. Optional: Melt the white chocolate and drizzle over top of the strawberries on top of the pie.
