Swiss Grilled Cheese with Blackberries, Sugared Bacon & Thyme

Blackberry Jam:
- 4 cups fresh blackberries, divided
- ¼ cup pure honey
- ½ orange, zested and juiced
- 0,13 tsp kosher salt
- 1½ tsps fresh thyme leaves
For bacon and assembly:
- 8 slices thick cut bacon
- ¼ cup pure maple syrup
- ½ cup brown sugar
- 1 cup unsalted butter, room temp
- 8 thick slices sourdough bread

Instructions
- For blackberry jam, in small saucepan, combine 2 cups blackberries, honey, orange zest, orange juice and salt. Cook, stirring frequently, until berries burst and form a thick jam, about 10 to 15 minutes. Remove from heat and stir in remaining blackberries and thyme. Let cool at room temperature for about 30 minutes.
- Meanwhile, for bacon, preheat oven to 350°F. Line a rimmed baking sheet with aluminum foil and wire rack. Place bacon in an even layer on prepared baking sheet. Brush both sides of bacon with maple syrup and coat liberally with brown sugar. Bake until bacon is golden-brown and crisp, about 20 to 25 minutes. Transfer bacon to a wire rack to cool at room temperature.
- For assembly, generously butter one side of each slice of bread with 1 tablespoon butter. Place 2 slices of bread, buttered-side-down, in the same clean skillet. Top each slice of bread evenly with 2 slices of Swiss cheese. Cook until bread is toasted and cheese is melted, about 2 to 3 minutes. Top 1 slice of bread with roughly a 1/4 cup of blackberry jam and 2 slices of bacon. Place the other toasted slice of bread cheese-side-down on bacon. Remove sandwich from pan and set side. Repeat with remaining bread slices, jam, bacon and Swiss cheese.
- Slice sandwiches in half and serve.
