Finnish Almond Butter Cake

Finns consume the most coffee per capita in the world and always like a sweet treat to enjoy on a coffee break. This decadent cake made with Finlandia Unsalted Butter has been a favorite in my family for generations.

1 ¾ cups
2 cups
Sugar
4
Eggs
1 ½ tsp
Almond Extract
1 tsp
Vanilla Extract
1 ¾ cups
All-Purpose Flour
2 tsp
Baking Powder
2 tsp
Salt
Powdered Sugar

Instructions

  1. Preheat oven to 350 degrees F. Grease a Bundt pan with Finlandia Unsalted Butter and dust with flour. Set aside.
  2. In a large mixing bowl, cream together the 1-3/4 cups Finlandia Unsalted Butter with the sugar. Add eggs, one at a time, mixing well after each addition. Mix in almond and vanilla extracts.
  3. In a medium bowl, combine flours, baking powder and salt. Working in 3 batches, combine flour mixture with butter mixture. Batter will be thick.
  4. Spoon batter into the prepared Bundt pan, spreading it out evenly and pressing down lightly to remove any air pockets. Bake in 350 degree oven for 40-45 minutes or until a toothpick inserted in the center comes out clean.
  5. Remove from oven and cool in the pan on a wire rack for 15 minutes. After 15 minutes, invert cake onto wire rack and cool completely. When ready to serve, dust with powdered sugar.
