  • 2 large red onions, thinly sliced
  • Kosher salt and freshly ground black pepper, to taste
  • 1 lb pizza dough, store-bought or homemade, room temperature
  • 2 cups shredded rotisserie chicken
  • ½ cup barbecue sauce, store-bought or homemade
  • 5 slices bacon, cooked and chopped
  • 4 slices each

  • 1 large egg, lightly beaten
  • 2 teaspoons white sesame seeds
  • Ranch dressing, store-bought or homemade, for serving

Instructions

  1. For onions, melt butter in a large skillet over medium heat. Add onions, and cook, stirring occasionally, until softened and golden-brown, about 15-20 minutes. Season with salt and pepper; set aside.
  2. Preheat oven to 375°F and line a rimmed baking sheet with parchment paper. Combine chicken and barbecue sauce in a large bowl. Place dough on a lightly floured work surface and roll into a 10x16” rectangle, with the long side facing you. Arrange one row of cheddar and one row of Monterey Jack evenly down the center of the dough. Spread caramelized onions evenly over cheese. Top onions with chicken mixture. Place Swiss and Colby Jack evenly in 2 rows over chicken mixture. Sprinkle evenly with bacon. Fold in edges of dough around the filling, pinching edges together tightly to seal. Place stromboli, seam-side-down, on prepared baking sheet.
  3. Brush stromboli with egg and sprinkle with sesame seeds. Make a few small, shallow slits across the top of the stromboli. Bake, turning baking sheet halfway through, until golden-brown, about 20-25 minutes. Serve with ranch, and enjoy.
