Bacon Jam Cheeseburger Sliders

Ingredients

Bacon Jam

  • 1 lb thick-cut bacon, chopped
  • 1 medium yellow onion, finely chopped
  • 2 cloves garlic, minced
  • ¾ cups brewed coffee
  • ¼ cup packed brown sugar
  • ¼ cup apple cider vinegar
  • Freshly ground black pepper, to taste

Instructions

  1. For bacon jam, add bacon to a cold large skillet and heat to medium heat. Cook, stirring occasionally, until bacon is golden-brown and crisp, about 12-15 minutes. Transfer bacon to a paper-towel-lined plate. Drain all but 1 tablespoon of bacon fat from pan. Add onions and garlic, and cook, stirring occasionally, until tender, 3-5 minutes. Add cooked bacon, coffee, sugar and vinegar, and simmer over low heat, until mixture reduces and thickens, about 25-30 minutes. Season with pepper, to taste. Remove from heat. Serve warm or transfer to an airtight container and keep refrigerated for up to 1 week.
  2. Preheat oven to 425°F and coat a rimmed baking sheet with oil. Press ground beef into an even layer in prepared baking sheet. Season with salt and pepper. Bake until fully cooked, about 15-20 minutes. Set aside and allow to rest for 10 minutes before removing from baking sheet. Once cooled, trim the edges of the patty, as needed, to fit rolls.
  3. Slice all 12 rolls, without separating, horizontally in half. Place bottom halves of rolls in a 9x13-inch baking dish. Top bottoms with beef patties and top with cheeses. Spread bacon jam evenly over cheese and top with pickle chips and top buns. Brush tops of sliders with melted butter. Bake until cheese is melted and tops of sliders are lightly toasted, about 15 minutes. Serve and enjoy.
