Spread 1 1/2 tablespoons chopped olives on bottom slice of one focaccia square, and about 1 tablespoon mayonnaise on top slice. Layer bottom with Finlandia Swiss Cheese, half of the ham, onion, basil, and tomato. Top with other half of bread.
Repeat with remaining ingredients for second sandwich.
For a handy lunch on the go, drizzle extra virgin olive oil over the fillings, add the top half of the focaccia, then wrap with plastic film. Place it into a 9x4-inch loaf pan, then gently weight the sandwich down with a can of soup or something similar, and place in the refrigerator overnight. In the morning, grab the sammy and lots of napkins for a pre-wrapped lunch on the go.
