Perfectly moist and sweet, our banana nut bread will warm you up on a cold day. Enjoy it for breakfast, lightly toasted with a smear of our salted butter.

Ingredients
  • 3-4 very ripe bananas (mashed)
  • 1 cup of sugar
  • 1 teaspoon vanilla extract
  • 1-1/2 cups all purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1 teaspoon salt
  • 1 large beaten egg
  • 1/3 cup Finlandia Unsalted Butter, melted but not hot
  • 1/3 cup chopped pecans or walnuts
  • 1/3 whole nuts
  • 1/2 cup of raisins
Instructions

Preheat oven to 350F degrees. Lightly spray loaf pan with nonstick cooking spray. In a medium bowl, combine flour, baking soda, salt and cinnamon. Set aside. In another medium bowl, mix together the mashed bananas, butter, egg, sugar and vanilla extract. Once wet ingredients are mixed thoroughly, slowly stir in dry ingredients until mixture is blended, then fold in the chopped nuts and raisins. Pour batter into baking pan. Bake for approximately 20 minutes, remove from oven and sprinkle 1/3 cup of whole nuts evenly over top of the loaf. Continue baking for another 40 minutes or until toothpick comes out clean. Remove bread and allow to slightly cool before serving. Then slice and enjoy!

Try our rich and delicious brown butter frosting:

  • 1/2 cup Finlandia Unsalted Butter
  • 3 tablespoons milk
  • 1-1/2 teaspoons vanilla extract
  • 4 cups powdered sugar
    • In a large saucepan, over medium heat, bring butter to slight boil. Remove from heat once it begins to turn slightly brown and nutty in color. Slowly whisk in milk and vanilla extract into the mixture. Add powdered sugar and whisk until smooth and creamy. Let sit for a few minutes. Spread over bread and enjoy!
